As meticulously as we source each product that enters our kitchen, so to do we source each bottle of wine that enters our cellar.
We work only with small wineries and dedicated winemakers whose agricultural philosophy echoes that of our farmers’ – careful work in the vineyards without chemicals and sensitive work in the cellar with little to no added sulphites. We value frequent communication to understand their process and the vibrant nature of their living wines.
As the seasons change, the wine list will too – ensuring that no matter which bottle a guest chooses, it will dovetail with the flavours and sensations of that moment in time.
A beverage pairing at ernst includes individual wines to accompany several courses. We encourage our guests to observe and enjoy how each glass changes with time, temperature and air contact.
